Ash Plantain (Alu Kesel) chips with Tamarind Sauce


 

Ingredients:

  • 250g Ash Plantain
  • 150g Rice Flour


  • 1 pack of Maggi Rasa Musu (the product is fortified with iron. One pack provides 1/3 of the Recommended Daily Allowance of iron for adults)
  • 50g Tamarind dissolved in 40 ml of water
  • 2 tablespoons of Sugar
  • 2 tablespoons of Maggi Tomato Sauce
  • 1 stick of Cinnamon
  • ¼ teaspoon of Chili Powder

Method

Ash Plantain Chips

Start by washing and skinning the ash plantain, then slice them lengthwise into long thin strips.

Add the pack of Maggi Rasa Musu to the slices of ash plantain and mix well. Then add the rice flour and mix the contents thoroughly. Heat a pan with a little oil on the stove and fry the ash plantain a few strips at a time so they do not stick together.

Tamarind Sauce

Add the dissolved Tamarind into a small pan and place it on the stove, on low heat. Add the sugar, tomato sauce, cinnamon and chili powder, stir the mixture well and then allow to slowly simmer for about 15 minutes. Stir regularly to avoid lumping or burning.

Once cooled you can serve the sauce as a dip, accompanied by the ash plantain chips for a healthy snack or meal.
