Cardamom rice pudding
 

Ingredients:

  • Rice - 150g
  • Salt - ½ tablespoon
  • Cardamom pods - 5
  • Cinnamon stick - 1
  • Nespray - 2 ½ cups
  • Sugar - 3 tablespoons
  • Milkmaid - 1 big tin
  • Egg (beaten) - 1
  • Lemon zest - 10 grams
  • Plums - 100 grams (soaked in warm water for two hours)
 
 
Preparation time: 30-40 minutes

Method

  • In a saucepan, cook the rice with salt, cardamom pods, cinnamon stick and 1 cup of Nespray milk until it boils. Simmer for 15-20 minutes until most of the milk is absorbed.
  • Mix the remaining milk with the cooked rice. Add sugar and half the quantity of Milkmaid and boil for another 12 minutes until the rice is well cooked
  • Stir in the beaten egg rapidly over the mixture until it curdles well. Take the pan off the heat and add the remaining Milkmaid lemon zest and raisins. Stir well, pour into a bowl and cover with a piece of plastic wrap to avoid a layer forming on top.
